I spent some time in Denver recently, doing a home exchange between my Bushwick, Brooklyn apartment and a cute bungalow in the Highland neighborhood in North Denver while also visiting relatives. (Incidentally, Highland was named “the Brooklyn of Colorado” in an article posted by Thrillist that ironically indicates the “Brooklyn” of every state.)

On my way back to New York City, I got caught up in a series of delays at Denver International Airport (DIA) that involved inclement weather as well as an airline strike.

What to do?

Go have a burger and drink, obviously.

DIA hosts an outpost of the cool Root Down, a Highland neighborhood restaurant that blossomed in a cleverly converted gas station and which offers unique drinks and inspired small plates. The airport lounge version of this establishment is stylish and comfy, too.

Since I’m not an alcohol consumer, but like a mixed drink once in a while, I went with the NA (non-alcoholic) Coconut Ginger Fizz. This dreamy, creamy sparkling concoction consists of, in its alcoholic form, organic gin, ginger, lime, coconut milk, and sparking water shaken & served over ice with a lime wheel. Easy enough to add a bit of extra coconut milk and sparkling water to render this spicy delight a teetotaler’s fantasy!

Full Disclosure: While in North Denver I also visited Sweet Cow. Now I understand what nirvana really means: Vermont Maple Walnut ice cream.
